Having installed mobileuncle tools, I have the following;
Hardware: MTK6582
Brand: No1
Product: S7
Display: JSS15J.S7UBUBMJ2
Release: 4.2.2

Only date I can see showing is Thu 24 July 2014.

Okay. Please confirm that it is the 1gb RAM + 16GB ROM version of the S7.

Pardon me for being dumb, but where do I find this information about 1gb ram + 16gb Rom?

Also, if I flash, do I lose all the information on my phone such as apps, texts and whatsapp messages?

Not at all dumb, darbs. You can go into Settings > Storage. The ROM storage is the internal + phone storage sizes.
Then go into Settings > Apps > Running. you should see a RAM meter at the bottom. see what the total size is.

If the update is KitKat (Android v4.4), you won't be able to restore your app data.
If the update is still JellyBean (Android v4.2), you can make a backup of your data using CWM or Titanium Backup, then restore them after flashing. Make sure you save the app data backup on your sd card or PC.

I have internal storage of 0.98gb & 14.83gb
Ram meter says 560mb used & 448mb free

Okay, looks like its the right version. it might be best to make a backup of your app data anyway, you can try and see if it is possible to restore even if its a different android version.
i'm not sure about whatsapp messages. ive never tried that before.

So do I need to flash first or update? And this is done with the phone connected to my laptop?

First, make a full backup of your ROM using MTK Droid Tools. In the !Files_to_Flash folder that will be created, make sure you have a complete set of files. (Preloader, boot, recovery, secro, logo, EBR1, EBR2, system, fat, MBR, uboot or lk, cache, userdata)
Then, if you have CWM installed, make a complete backup with that as well. (this is for userdata)
To be extra sure, make individual app backups with Titanium Backup (can be downloaded from Play)
To update, you will need to flash the new ROM. Follow this tutorial about how to use SP Flash Tool [Only registered and activated users can see links Click here to register]

be extra careful in every step, especially when you get to flashing. remember, there is certain risk in everything.
