I got my MI2 today,
How do i remove all of baidu's apps ? remove the chinese keyboard ?
and how do i make all the tips speak english and not chinese ?

you have to root it first,
then use the root uninstaller

That works for getting rid of all the baidu apps,
but how do I delete the baidu search bar at the top of the homescreen ?

You need to load the google search ber, either just that app or download and load the JB Google Apps bundle.
