Sum tam is not sweetened. If it is, the insanity spice level certainly overpowers it.

Every shop makes their som tom a little differently. Sugar is one of the ingredients normally.
There is a high prevalence of disease and diabetes here. Really their diet is quite terrible. The rice is higher GI than pure glucose. Tons of deep fried food and fatty meat. You should see what they feed the kids at school lunch.
These things have been deep frying for like 2 hours straight. Wouldn't be surprised if they had been reused from the day before.
