In the review it mentions that standard battery size for a 5" is around 2000mAh.
Is it extraordinarily uncommon that my S7589 (5.7") has a 3200mAh battery? Is it over-stated? Why don't these bigger phones come with a significantly larger battery as well?

There's quite a difference between 5 and 5.7. Also, it's not uncommon for the OEM brands to vastly overstate battery size.

Well it's not to say your S7589 doesn't truly have a 3200mA battery. It's not outside the realm of possibility for a 5.7" phone to have a 3200mA. I believe the real Note 2 and Note 3 comes stock with 3200mA.
Also China brands have been getting much better with putting the true battery capacities. Not same as a couple years back.

Finally installed GSam Battery Monitor so I could have a basis of comparison. Let it run for the past couple of days.
On this battery (Star S7589), after about 8 months of abuse, here's where I'm at.

Screen On: 2h 35m (1h 23m Max)

I will try with whatever gloves I can find when I receive the phone. I'm pretty sure my weightlifting gloves will have no problems, but I can't speak for the rest. I'm most concerned about the boxing gloves. In either case, I will report back in a few days.
Off-topic. I did some reading regarding phones and battery life. I apparently over-charge the snotballs out of most of my phones from fear of them running out of battery. It turns out the "happy place" for a battery to live is between 50%-80%, so I try not to charge unless I'm below 50 now. As a result, here are the updated stats on my Star S7589 (5 days later):
